Deconstructed Stuffed Peppers

I was really wanting to make stuffed peppers for dinner and decided to do a google search for Paleo recipes along these lines. I can across this recipe from Paleo Porn 🙂 it turned out to be very yummy and the spice blend was different from what I’m used to. I chose to leave out the banana pepper. A friend of mine also suggested that the dish would be good with a little bit of curry powder added with the spices/herbs- will possibly try that next time. This was an easy and comforting weeknight dinner. Enjoy!

My first batch of homemade spaghetti sauce!

I used the recipe above as the base for my sauce. I then added a cup of frozen diced green pepper, both a yellow and orange pepper diced, about 2 small zucchini sliced, some celery, and instead of the honey, I used coconut crystals.

Once everything was done cooking for about 2-3 hours, I used an emulsion blender and pureed the sauce. I then stirred in cooked ground beef and mild Italian sausage.

Pork and Roasted Veggies

Tonight I decided to make a pork tenderloin with an herb de Provence “crust”. The sauce is simple, you take one cup of any kind of fruit preserve, one cup of water, and 2 tbsp balsamic vinegar. Combine in a small saucepan, bring to a boil, whisk to combine, then bring to a simmer until the sauce is thick enough to coat the back of a spoon.
I patted the pork dry, salt/peppered it, then rubbed it with the herbs de Provence mix. I seared it on all four sides before placing in the over to cook for 30 minutes.
The veggies were just simply roasted with olive oil and a seasoning salt!

Ice Cream!!!

For Christmas I asked for the kitchenaid stand mixer ice cream attachment. Today I made ice cream for the first time and it is amazing! Ugh I’ll never crave or want regular ice cream again; this is so much better! It was surprisingly easy to make also 🙂

*You will need to use the egg yolks only so it’s a good idea to have a recipe in mind so you can use the egg whites too instead of just trashing them!

The Back to School Blues…

So tomorrow it’s back to work, the winter break is over 😦 Tonight I wanted comfort food! So I made the chicken tenders from Against All Grain

They are so yummy and hit the spot! A little sweet too which is nice. Along with the chicken I had roasted brussels sprouts and some homemade sweet potato fries. Click on the link above to enjoy the recipe yourself!!

A Paleo Get-Together and A List of Resources

Saturday night I met two friends for dinner, one of which is currently making the transition to a more paleo eating lifestyle. We had rosemary beets from Elana’s Pantry, Medaterainian Turkey Burgers from STupidEasyPaleo, pan sautéed asparagus with slivered almonds and some orange zest, and a spinach salad with walnuts, blueberries, and cranberries! Everything was delicious! For dessert, I made the Raspberry Torte from Make It Paleo and topped it with some coconut whip cream 🙂

I was able to set up a “file” of great paleo websites for my friend to help her gain information and recipes. Here are I think all of the sites I’ve found so helpful:

We also had great conversation about how eating paleo is so beneficial, that now we are actually tasting the food and flavors, and that it has really opened our eyes to new dishes and new food/spice combinations!!

ps. I took a picture of my dessert but it was one of those that just really did not photograph well! I had to modify the presentation as it stuck in my springform pan (my fault) and no longer had the pretty even round shape that is planned for.

Beanie Weenies

Beanie Weenies used to be a favorite meal as a kid :). Every once in a while I crave this meal and since deciding the paleo way of eating, I’ve craved this twice but haven’t caved since it’s beans. Well!! I found an amazing recipe that is 100 times BETTER than the original can of beans and some hotdogs. Diced sweet potatoes are used in place of beans and at first it seemed strange to me but I have it a shot and this recipe is awesome. A big thanks to The Paleo Parents for this recipe!

“Potato” Leek Soup with Crispy Bacon

Today has been a great lazy rainy day. A perfect day to try making a new soup! I made leek soup from StupidEasyPaleo
and it’s ridiculous how easy is was to make yet have such a great flavor! All you need is some coconut milk, 2 large leeks, onion, cauliflower, and chicken stock. I used an immersion blender to purée everything till smooth once done cooking. The link above will take you to the recipe.

I decided to try baking the bacon this time and I’m very pleased with how it turned out. No mess on the stove and no fire alarm going off!!

I spooned the soup into a bowl and then topped with the bacon crumbled.
